Banana Bread
Now, who doesn’t have old bananas lurking in their fruit bowl?? I must say we love bananas, and this is one of our favourite recipes for banana bread. And what more, it’s quick and easy! Let me know what you think.
Ingredients:
140g butter, softened
140g caster sugar
2 large eggs, beaten
140g self raising flour (or plain flour + 1tsp baking powder)
1tsp baking powder
2 ripe bananas, mashed
1tbsp cocoa powder
1tsp milk
Handful of pecan nuts or banana chips for decoration
Method:
1. Heat oven to 180oC, line your loaf tin with baking paper.
2. Cream 140g softened butter and 140 caster sugar until pale, then slowly add 2 beaten eggs and part of the flour.
3. Gently mix in the remaining flour, 1tsp baking powder and 2 mashed bananas. Sift in 1 tbsp cocoa powder and add 1 tsp milk. Gently mix again.
4. Transfer the mixture into the prepared tin, arrange the pecan nuts on top and bake for about 50 minutes, or until cooked through (check by inserting a skewer – if it comes out clean, your cake is done).
5. Cool in the tin for 10 minutes, then remove to a wire rack.
