Fig, Goats Cheese and Caramelized Onion Galette

This is such a beautiful galette, packed full of lovely flavours. The pastry itself is light and soft and each layer works really well together. Great for a lunch or light dinner, served on its own or with a side salad!

Method:


1. For the pastry, combine flour, butter and salt in a bowl and rub these together in your fingers until you have a crumbly texture. Add the water and thyme and make a dough. Roll it into a ball, cover with cling film and put into a refrigerator for 30 minutes.

2. Tip your Goats’ cheese and 1tsp oil into a small bowl and mix them together using a fork. Set aside.

3. To make the caramelized onions, add 1 tbsp of oil in a pan, add the sliced onion and gently sauté for about 10 minutes. Add 2 tbsp pomegranate molasses, stir through and sauté for another 5 minutes. Set aside and let cool a little.

4. Heat your oven to 180°C/Gas mark 4/ 356°F. Have a baking paper and tray ready, I used my pizza stone as it’s a large circle shape.

5. Quarter your figs.

6. Take your pastry out of the fridge and roll it out into a large circle (you may want to flour the surface first or roll it out straight on your baking paper. Transfer to a lined tray if you haven’t done so yet. Mark the inner circle using a plate, this is where your filling will go.

7. Now you are ready to add your fillings. First, spread your goats’ cheese mixture on, then add the caramelized onion and lastly arrange your figs around your inner circle. Fold the edges of the pastry over to create a galette. Chill for 5 minutes.

8. Before putting your galette into the oven, brush edges with milk and then bake for about 45 minutes.
