Mackerel Melt
Mackerel Melt on Sourdough Bread
Satisfying, delicious, healthy, quick… just few reasons why you should try this this Mackerel Melt! It’s made with canned mackerel, which is a great alternative to smoked mackerel, full of Omega-3 and omega-6 fatty acids and rich in protein. Enjoy on a sourdough bread or as a topping for a jacket potato.
You will need (1 portion):
1 can of mackerel in oil
1/4 small red onion, chopped
small bunch of parsley, chopped
1 tbsp mayonnaise
1 tsp (squeeze) lemon juice
1/2 tsp Dijon mustard
pepper and chilli flakes (optional)
2 slices of sourdough bread, cut half
2 slices of cheddar cheese
2 small/1 large pickled gherkin, sliced
knob of butter, softened
Method:
1. In a bowl, gently mix together the mackerel, red onion, parsley, mayonnaise, lemon juice, Dijon mustard and season with pepper and chilli flakes.
2. Spead the mixture onto the sourdough half, top with slice of cheddar cheese and gherkin and close with the other half of the bread. Repeat with the other slice.
3. Preheat a pan. Butter the top and bottom of the bread and cook in the pan until golden brown and warmed through. Alternatively, you could warm them through in your air fryer.
4. Enjoy with side salad or your favourite crisps/chips!
