What happens when you add a wrap to omelette? Wromelette! Give it a go, you will be pleasantly surprised.
Recipe:
5 eggs, free range/organic if possible
1/4 of Chorizo sausage, chopped
3 spring onions, sliced
1/4 pepper, chopped
1 tortilla wrap
Few cherry tomatoes
Handful of peas (I used frozen)
BBQ seasoning
Chopped fresh parsley
Olive oil for frying
Method:
1. Tear the tortilla wrap into small pieces and lightly heat through to crisp up a bit.
2. Crack the eggs into a bowl, add salt, pepper, BBQ seasoning and give it a mix. Add the wrap and let soak for a bit.
3. Meanwhile add oil, chorizo, spring onions and pepper to the pan and gently fry for few minutes.
4. Once soft, add the mixture to the eggs and wrap mixture, stir, add peas and chopped parsley and transfer back into the frying pan. Arrange cherry tomatoes on top, cover and gently cook for few minutes, then transfer under the grill to finish the top.
