Chorizo and Courgette Pasta
I love simple and quick pasta and this is one of those. All you need is a few ingredients, 20 to 30 minutes of your time and you have a delicious meal for the whole family.
You will need:
Pasta of your choice
1 small onion, finely chopped
1 Spanish Chorizo ring, sliced
3-4 cloves of garlic, finely chopped
1 medium courgette, peeled and coarsely grated
1 heaped tsp Nduja paste
250ml double (heavy) cream
30g Grana Padano cheese, plus extra to finish
salt, olive oil
Method:
1. Bring a large pot of water to boil and add your pasta and salt. Cook according to the instructions on the packet, al dente if you like your pasta firmer.
2. Sauté the finely chopped onion in some olive oil until softened. Add chorizo and sauté for 2 more minutes. Next, add the grated courgette and garlic and cook for another 2-3 minutes. Stir in the Nduja paste, pour in the double cream and simmer for further 5 minutes. Grate in the Grana Padano cheese, taste and season with salt if needed.
3. Once the pasta is cooked, start adding it to your sauce, reserving the water. You will need between 100-200ml, depending on how much pasta you have. (Tip – if you have leftover pasta, make sure you keep some more pasta water for reheating it ;). Once your pasta is in the pan with the sauce, start adding the pasta water, bit by bit, gently tossing it through until required consistency.
4. Serve with more grated Grana Padano if desired.
Note – as the Nduja paste has a touch of heat in it, you may want to choose a milder Chorizo (or not! If you like a bit of heat just go for it
