My Onion Soup
I love onion soup, but sorry to say not the French kind! I grew up with this simple version that doesn’t require hours of cooking, give it a try, you’ll be pleasantly surprised.
Ingredients:
2 large brown onions, thinly sliced
20g butter
1l beef stock
Pinch of nutmeg
1/2tsp caraway seeds, crushed if possible
Salt and pepper as needed
Toast
Cheddar cheese
Method:
1. Add butter and onions to pan and slowly sauté for about 25 minutes.
2. Add stock, caraway seeds and a pinch of nutmeg. Simmer for another 15 minutes. Season if needed.
3. In the meantime, prepare your toast. Once toasted, top with some of the grated cheddar and melt.
4. Ladle soup into your bowl, add toast with melted cheese, and sprinkle with some more cheese.
